Yellow dragon fruit — also known as yellow pitaya or Selenicereus megalanthus — is the sweetest variety in the dragon fruit family. Unlike the familiar pink-skinned fruit, this one carries a golden, spiky skin over translucent white flesh flecked with soft black seeds. The taste sits somewhere between a ripe pear, a lychee and honeydew melon, with none of the mildness people often complain about in red dragon fruit.

The tiny black seeds are edible and add a light crunch. The skin is not eaten.

How to tell it is ripe

A ready yellow dragon fruit gives slightly under thumb pressure, like a ripe avocado, and carries a faint sweet smell at the stem end. If yours arrives firm, leave it out at room temperature for a day or two, then refrigerate.
